Ramadan


Ketayap - pancake filled with sweet coconut


Today my husband working late shift therefore he will break his fast at work. I cooked macaroni cheese. I used Colman's cheddar cheese sauce mix add fresh milk and boil for 3 minutes mixed with cooked macorani and top with lots and lots of grated cheddar cheese. Baked for 35 minutes.

I have leftover dough from my pineapple tart, waste not using jam make whole new cookies.

Cheese Cookies


The original name for this cookies is Spritz but as my dough is to stiff, I had problem using the pastry bag. I just roll it to small balls and press it using fork.

225 gm unsalted butter, softened 1/2 salt
80 gm cream cheese 110 gm gtanulated sugar
1 tsp vanilla extract 1/2 tsp lemon extract
225 gm plain flour

1. Beat the butter and cream cheese in a large mixing bowl. Add sugar and the vanilla and lemon extracts, then beat till combined. Stir in flour. Cover and chill dough in the refigerator for 30 minutes, or until easily worked but not to stiff.
2. Pack dough into biscuit press/pastry bag. Force dough through press onto ungreased baking sheets into the shapes you desire. Decorete with glace cherries/almond. Bake in preheated oven 190 C for 8-10 minutes, or until edges of cookies are firm but not brown.

Dessert Tako Siam

Mom's PineappleTart



I love to eat pineapple tart especially my moms' but unfortunatly for Eid Mubarak this year I stuck in London so I don't have my supply. To make it up I decided to do it myself. I started to make the pineapple jam not hard to do - 1 cup of grated pineapple and 1/2 cup of sugar just boil it until it a bit dry. This is the result....
