Film Cake


To made this cake I baked 2 cakes - the top layer Mocha Cake and the bottom layer - Rich Chocolate Cake. Source : the classic 1000 cake & bake recipes by wendy hobson

MOCHA CAKE

2 cups caster sugar
2 cups plain flour
3/4 cup cocoa powder
2 tsp bicarbonate soda
1 tsp baking powder
1/2 cup oil
1 cup hot black coffee
1 cup milk
2 eggs, lightly beaten

Mixed together the dry ingredients and make well in the center. Stir in the remaining ingredients and mix just until the dry ingredients have been absorbed. Spoon into a greased and lined 9x9in cake tin and baked in a preheated oven at 180c/350F/gas mark 4 for 35-40 minutes until a skewer inserted in the centre comes out clean

RICH CHOCOLATE CAKE

200g plain chocolate
1 tbsp strong black coffee
1 cup butter, softened
1 cup granulated sugar
4 eggs
2 cups plain flour
1 tsp baking powder

Melt the chocolate with the coffee in a heatproof bowl set over a pan of gently simmering water. Meanwhile cream together the butter and sugar until light and fluffy. Gradually add the eggs, beating well each addition. Stir in the melted chocolate, then fold in the flour and baking powder. Spoon the mixture into a greased and lined 9x9in cake tin and baked in a preheat oven at 190c/375F/gas mark 5 for 45-50 minutes until a skewer inserted in the centre comes clean. If necessary, cover the top with foil or greaseproof paper for the last 10 minutes of cooking to prevent over browning.

Leave the cakes until cool then level the top of both of the cake using the knife of cake leveler. Spread cream or chocolate cream on top of Chocolate cake and put the mocha cake onto it (like a sandwich). Cover the cakes with cream then cover it with Ready rolled white icing and decorated as you like.
